Super Simple Flower-Shaped Stuffed Bell Peppers
This vegetarian recipe for flower-shaped stuffed bell peppers is great because it’s super simple, super healthy, and soo super fun that your kids won’t even care that it’s meatless. It’s basically 3 ingredients, beans, whole grain, and bell peppers. Check out my low-fat tip that makes the whole grain taste like rich buttery popcorn!

Mom, I don’t smell any meat. Where’s my protein?? I’ll starvvvvvvvve.

Because I didn’t see you starve when you chowed down on that box of pretzels after school. No protein there….Now eat your beans—they’re a power food of protein.
Whenever I try to do a vegetarian dish, I feel like I need to GO BIG OR GO HOME!
So I try to come up with ideas that are SOO exciting that my carnivorous family won’t even notice that the meat is missing!
Yes—my strategy is DISTRACT and CONQUER.
So when I wanted to make a simple whole grain and bean dish, I realized—I better disguise it as something super cool so my family won’t realized they’re just eating beans and grains.
I looked in my fridge and saw some really pretty bell peppers but suddenly, they weren’t bell peppers anymore….they were…<drum roll please>….
FLOWER SHAPED STUFFFED PEPPERS!

How to Make Super Simple Flower-Shaped Stuffed Bell Peppers
This recipe is great because it’s super simple (#momwin) and it’s soo fun that your kids won’t even care that there’s no meat.
Here’s What You’ll Need:
- Beans (1-2 cans)
- Whole grain (I used Trader Joe’s 10 Minute Farro)
- Canned Coconut Milk
- 1 bell pepper per person
- Avocado or pre-made guacamole
- Your choice of seasoning for the beans or grain

Steps to Make the Flower-Shaped Stuffed Bell Peppers:
Step 1: Cook the Beans
First, cook the beans on the stove top. Add any spice that you desire. (I used a sprinkling of chili powder and cumin).
Can you guess who picked out the pink beans? I didn’t even know such a thing existed!
Step 2: Cook the grains
While the beans are cooking, prepare the grain according to the package. I highly recommend Trader Joe’s 10 Minute grains. It comes in Farro (spelt) or Barley. They’re delish, nutritious, and super easy to prepare.
Wanna know my secret to take the grain from whaaa to WOW?
Add a can of low fat coconut milk to the grain when cooking! It gives it a rich buttery flavor that reminds me of popcorn.
When making whole grains, substitute a can of water for a can of coconut milk! Ur Kids will LOVE it!!!! #Kid-friendly Click To TweetBring 1 can of water and 1 can of coconut milk to a boil, then add the Farro or Barley. I find that using only 1 can of liquid isn’t enough and the grain stays too al dente.
Cook the grain until all the liquid is absorbed.
Step 3: Prepare the Peppers.
While the beans and grain are cooking, it’s time to prepare the peppers.
Cut off the tops and scoop out the core.
Step 4: Turn the peppers into Flowers!
Simply cut some zig zags (or V-shapes) along the rim. This makes the tulip/petal shape.
It’s REALLY THAT EASY.
Trust me–if I can do it, then so can you!
Then, when everything on the stove top is ready, add them into the flower cups—grain first, then beans.
You’ll find that only a little bit fits, so add the remaining grain and beans into serving dishes. I let my family keep adding to their flowers as necessary. I also added some beans to the side–as shown below.
I garnished the flowers with guacamole to look like leaves. My girls thought this was super fun!
And super delicious!
Voila! Successful vegetarian dinner that even carnivorous kids will love!
