August is here and that means major summer heat! The kind that makes you just want to sit by a cool body of water all day long and dream about refreshing pineapple boat drinks. But that’s not very realistic or sustainable. I mean really–you can’t just drink pineapple drinks all day long….or can you? Actually–you can if they’re healthy smoothies like my Super Refreshing Tropical Mint Smoothie!

When it’s hot, I want to spend as little time in the kitchen as possible…enter my Vitamix! There’s just something super refreshing about tropical smoothies when it’s oppressively hot outside. I love to make a big batch of a coconut milk based pineapple/mango smoothie for myself and my family. It’s filling and gives me energy to keep moving in the heat of the day.
Pineapple and Mango are important Super Foods
Did you know that pineapple and mango are very important power foods?
Pineapple is packed with the mineral manganese (which promotes bone health and antioxidant defense) as well as Vitamin C and thiamin (a form of Vitamin B) which promotes energy—Great for Tired Moms, right??! It also contains bromelain which helps in digestion, anti-inflamation, and eye health. (For more on the health benefits of pineapple visit Live Science).
Mango has similar health benefits as pineapple but also helps with asthma prevention as well as breast, colon and prostate cancer prevention (due to the high beta carotene). Super Refreshing Tropical Mint Smoothie
Here’s the recipe for my new Go-To tropical smoothie. This one is vegan (no dairy). But if you’d like a recipe that uses Greek Yogurt, check out my other Green Tropical Smoothie recipe–it’s a big winner with my kids!
Tropical Mint Smoothie Recipe
- 1 cup unsweetened coconut milk
- 1/2 cup water
- 1 scoop protein powder (whichever one you like)
- 1 table spoon flax seed meal
- 1 cup spinach
- 1/2 cup frozen fruit tropical mix (strawberries, pineapple, mango)
- 1 small banana
- a few mint leaves
- Pour the liquids into your blender.
- Then add the dry ingredients –protein powder and flax seed meal.
- Next, add the spinach, frozen fruit, and banana.
- Top off with a few mint leaves. Blend until well mixed.
