How to Make Super Easy Greek Potato Salad
This super easy Red, White, and Blue Greek Potato Salad recipe is great for picnics, parties, and gatherings. My favorite addition for patriotic fun-purple potatoes! Check out all my tips and tricks in the post.
My mom first started making this recipe years ago as a healthier alternative to traditional mayo based potato salad. It’s been a family tradition ever since. I’ve changed around some ingredients over the years, but it’s still the basic recipe that I’ve grown to love and I hope you will too.
If I’m making this for a Patriotic holiday like Memorial Day, July 4th, Labor Day, or Veteran’s Day, I always use a combination of red skinned potatoes, purple potatoes, and white potatoes. (The purple potatoes are really more of a bluish tint than purple, especially when cooked). All three colors combined lend a super fun, festive, flare!
Bonus—Purple potatoes are packed with extra vitamins and nutrients.
I’ve always had good luck finding the bags of red, white, and purple potatoes at Trader Joes, but recently, I’ve also started seeing them at Kroger and Publix.
How to make Red, White, and Blue Greek Potato Salad
Ingredients:
- Potatoes—(I like to use a combination of red skin, white, and purple potatoes).
- 1/2 cup sliced and pitted olives
- 1/2 cup feta cheese
- 1 bottle your favorite creamy Greek dressing
- 3 hard boiled eggs (Optional)
Instructions:
- Boil the potatoes, drain and put in a large bowl.
- Add the olives and feta cheese.
- If you’d like to add the hardboiled eggs, slice them then add them to the potato salad. (The original recipe does not call for eggs, but my husband loves them so we always add them.)
- Finally, pour in your favorite creamy Greek dressing.
