Quick and Easy Power Salad Recipe
I love eating salads packed with a million vegetables. The more veggies and ingredients, the better! However, as a busy mom I’m always short on time! So I look for shortcuts, and I get very excited when I find quick and easy ways to make healthy meals, especially salads packed with power veggies.
Shana’s Favorite Quick and Easy Power Salad
One of my favorite shortcuts is the Healthy 8 Veggie Mix from Trader Joe’s. It’s super crunchy and packed with power veggies. I love to use it as a base for a lot of my salads. The Healthy 8 Veggie Mix comes with 8 power foods including: broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish, and celery. Broccoli and cabbage are important cruciferous vegetables that help fight against cancer. They help prevent cancer as well as keep your body strong if you’re a cancer survivor (like me.)
Additionally, I add pepitas to my salad for a nice earthy crunch. But that’s not the only reason why I add pepitas. Pepitas are another power food. They’re packed with protein, fiber, magnesium, potassium, antioxidants, and L-tryptophan (improves mood and/or can make you sleepy) just to name a few. Lastly, I make a simple vinaigrette using organic apple cider vinegar, which has great probiotic properties as well as heart health benefits.
Ingredients
- Healthy 8 Veggie Mix
- Avocado
- 1/4 cup Pepitas (AKA pumpkin seeds)
- For dressing; olive oil, apple cider vinegar and lemon
Power Salad Recipe
- Mash up 1 small avocado and set aside.
- Next rinse a bowl-full of the Healthy 8 Veggie Mix. (I think it’s pre-washed, but I like to just rinse it anyway).
- Add the veggies, avocado, and pepitas in a bowl.
- To create the vinaigrette, mix 1 part organic apple cidar vinegar and 2 parts olive oil. Then squeeze in lemon juice from a 1/4 of a lemon. (You can use more if you’d like).
- Pour over salad to taste and store the remainder in a container at room temperature.
Time saver tips:
Prewash your Healthy 8 Veggie Mix and store in a container so it’s ready when you are.
Precut a lemon and store in a container so it’s ready whenever you need it. You can also use the lemon wedges for Morning Lemon Water which is great to get your body going first thing in the morning.
