I didn’t even know it was possible to make cookies that TASTE THIS GOOD! Soft and chewy with a warm melty Peppermint kiss in the middle, these cookies are too good to save just for Santa. They need to be shared with THE WORLD.

As I said just said—I don’t think I ever imagined I could make a cookie this mouth-watering-good!
But it makes perfect sense. I mean, it’s just so simple that it almost seems too simple.
How could something so magnificent be right in front of my own eyes and I didn’t even know about it??
When I was looking up different kinds of cookies, I was awoken to a whole world of “surprise” cookies. It’s when you take something—like a Hershey Kiss or Rolo candy and wrap cookie dough around it.
The result is a cute little SURPRISE inside.
“How fun,” I thought. I’ll just take my favorite holiday candy, Hershey’s Candy Cane Kisses, and wrap some cookie dough around it.
Little did I know JUST HOW AMAZING this would turn out to be!!!!!
The RESULT….
Soft, ooey gooey fresh out of the oven cookie goodness with Holiday Peppermint Bar oooozing from the inside.
It TASTED LIKE….
A WARM PEPPERMINT HUG.
Peppermint Bark Surprise Cookie Prepared Two Ways
I wasn’t sure how I wanted to make this recipe. Most Surprise Cookies use shortbread, but I’m more of a chocolate chip cookie kinda girl. So I used my tried and true Toll House Cookie recipe. I made 2 batches. One with mini chocolate chips and one without.
I made the one without first.
Vanilla –made without chocolate chips
O—M—G!
This chocolate-lover almost forgot that there wasn’t any chocolate!!! Almost! (I am a chocolate-lover after all).
The cookie outside has a nice vanilla taste and isn’t overly sweet.
Then, when you bite into the inside, you get a burst of warm peppermint goodness! Mmmm…soo yummy!
Mini Chocolate Chip Flavor
O-M-G…AGAIN!
As if these cookies couldn’t get any better, they JUST DID.
I added mini chocolate chips and they tasted like a decaf version of Starbuck’s Peppermint Mocha! Sooooo gooood!
How to Make Peppermint Bark Surprise Cookies
Ingredients
- 2¼ cups all-purpose flour.
- 1 teaspoon baking soda.
- 1 teaspoon salt.
- 1 cup (2 sticks) unsalted butter, softened.
- ¾ cup granulated sugar.
- ¾ cup packed brown sugar.
- 1 teaspoon Adam’s Extract Vanilla extract.
- 2 large eggs.
½ cup -1 cup mini chocolate chips (Optional)
1 bag of Hershey’s Candy Cane Kisses
Red Sprinkles (Optional)
For Optional White Chocolate Drizzle
½ cup (or more as needed) white chocolate chips
A tablespoon (as needed) of milk
Directions
- Step 1
- PREHEAT oven to 375° F.
- Step 2-Make the Base Dough
- COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. (Optional–Stir in mini chocolate chips).
- Now, create the cookie surprise! Take a tablespoon of cookie dough, flatten it out with your hand. Place an unwrapped Hershey’s Candy Cane Kiss on the dough.
- Then, wrap the dough around the Kiss.
- Repeat this until the cookie sheet is filled. (Space cookies a few inches apart like you would with traditional cookies).
- Bake the cookies for 8-11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
- While the cookies are cooling, make the Optional white chocolate drizzle. I simply add a tablespoon or so of milk to a ½ cup (or more) of white chocolate chips. Mix together and microwave for 30 sec. Mix again and microwave in 30 sec increments until completely melted.
- Drizzle over the cookies. Then sprinkle with red sprinkles.
