And NOW onto my Strawberry Protein Muffin Recipe!
My kids are not morning people. Which also means they are also not breakfast people. They would usually just grab a granola bar to eat on the way to school. And I hated the fact that they weren’t getting much nutrition. So this past year, I started making muffins with extra protein because then at least I know that they’re eating something a little more balanced as they rush out the door.
Our new muffin flavor of the summer is Strawberry and my girls are loving it! Even my husband has been caught sneaking some.

Super simple Strawberry muffins for quick on-the-go breakfast
Tip: To make this recipe super simple, I use a box of pancake mix.
Tip 2: Using Strawberry Butter from Chef Shamy adds an extra layer of a rich buttery flavor.
Ingredients:
- 1 Box Pancake Mix
- 4 tablespoons of Chef Shamy Strawberry Honey Butter
- 2 ¼ cups milk
- 2 large eggs
- 1/3 cup protein powder (I used peanut protein powder but you can use any kind)
- 1 bag white chocolate chips
- 1 bag of dehydrated strawberries (I got mine from Trader Joe’s)
Recipe:
Preheat oven to 350 degrees.
Combine all ingredients, except for the white chocolate chips and dehydrated strawberries, in a large mixing bowl or your stand-mixer bowl. Mix on low until all ingredients are well incorporated. Next, all the white chocolate chips and dehydrated strawberries. Mix briefly until the toppings are mixed in.
Pour into your lined muffin tin and bake at 350 degrees for about 15 minutes.
