How to Make Delicious Low-fat Pumpkin Protein Chocolate Chip Protein Muffins
These delicious and kid-friendly low-fat Pumpkin Chocolate Chip Protein Muffins are great for quick breakfasts for afternoon snacks. Made with Kodiak Cakes Cinnamon Oat Flapjack and Waffle Mix, they’re packed with protein and nutritious pumpkin! Made without eggs or butter, they’re a great low-fat way to enjoy the cozy flavors of the season.

HOW TO MAKE Low-Fat Pumpkin Chocolate Chip Protein Muffins
These muffins are so yummy. Your whole family will love them.
I added a cinnamon streusel to the top at the request of my older daughter. It does use 2 tablespoons of butter. If you’re watching your calories, just skip this step.
This recipe uses Kodiak Cakes brand mix because each serving contains 14 grams of protein (and it tastes delicious)! You could use any cake/muffin mix, but this is the one I always turn to.
One more thing—-
I like to use flaxseed in place of eggs. It makes my muffins super moist and lower in fat.
To replace 1 egg with ground flax seed, you take 1 tablespoon flax seed meal and combine with 3 tablespoons water. Set aside for 5 minutes. Then add to your recipe. SUPER EASY.

INGREDIENTS
- 2 Kodiak Cakes brand Cinnamon Oat flavored Flapjack and Waffle Mix
- 1 cup of milk (I used 2 %)
- Flaxseed egg substitute: 1 tablespoon ground flaxseed meal and 3 tablespoons water)
- ¼ cup apple sauce
- ¼ cup brown sugar
- 1 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/8 teaspoon cloves
- ¼ cup chocolate chips
Optional: Cinnamon Streusel Topping
- ¼ cup chopped pecans
- ¼ cup Kodiak Cakes Mix
- ¼ cup brown sugar
- ¼ teaspoon pumpkin pie spice
- 1 tablespoons butter, softened
STEPS
Preheat stove to 350.
Make your egg substitute. Combine 1 tablespoon ground flaxseed meal and 3 tablespoons water. Set aside for 5 minutes.
Combine all ingredients (including the egg substitute) in a mixer and until well combined.
Line a muffin tin with muffin liners and spoon in the batter.
OPTIONAL: Combine all of the cinnamon streusel topping ingredients. Mash and combine with a fork or your fingers. Then spoon into each muffin cup.
Bake for 16-18 minutes.
