Peppermint Holiday Treats
Last week, you might remember I shared my recipe for the most mouthwatering holiday cookie ever…..Peppermint Bark Surprise Cookies! OMG! They are soo good. The inside is filled with a surprise Hershey’s Peppermint Candy Cane Kiss and when it comes out of the oven, it’s soo melty, and gooey, and minty….. As we were gobbling them up, one of my daughter’s said “Mommy, can we save some for breakfast? “ And I said “NO! you don’t eat cookies for breakfast. You eat power muffins for breakfast.” And that’s when it hit me—we needed Peppermint muffins in our lives! And I’m sure you do too!
How to Make Muffins Healthier
Whenever I make muffins, I always like to add extra protein and other nutrients like flaxseed or zucchini, or apple sauce, etc. For example, my Low-fat Pumpkin Power Muffins use Pumpkin Spice protein powder and I always use flaxseed meal (which is high in antioxidants and omega-3’s ) instead of eggs. This is always make the muffins super moist. In this recipe, I used Kodiak muffin mix which has 14 grams of protein per serving. (Added bonus, they’re all natural and non-GMO). I also used apple sauce to replace the butter and to help cut back on the refined sugar.
How to Make Healthier Holiday Chocolate Peppermint Protein Muffins
Ingredient Notes:
You can use any Kodiak Cakes flavor. I’d recommend using the Dark Chocolate Flavor; it’s got a really rich, chocolate flavor. I used it in my AMAZING Decadent Low-fat S’mores Protein Muffins. If you use this, you don’t need to add extra cocoa. I only had the Chocolate Chip flavor Kodiak mix in my pantry, so I just added 2/3 cup cocoa. If you use the buttermilk flavor, you can do the same—add the 2/3 cup cocoa and you might want to add some mini chocolate chips.
Ingredients
- 2 cups of Kodiak Chocolate Chip Muffin Mix
- 2/3 cup cocoa powder
- 1 cup milk
- ½ cup brown sugar
- 1 cup Andes Candies Peppermint Baking Chips
- 1 tablespoon flax seed and 3 tablespoons water (for egg substitute)
- ¼ cup apple sauce (or 1 snack pack sized apple sauce)
Directions:
- Preheat oven to 350 degrees.
- Mix the flaxseed meal and 3 tablespoons water. Set aside for 5 minutes.
- Combine all ingredients (except for the Andes Candies baking chips) in a mixing bowl and mix until well combined.
- When the batter is well mixed, then add the baking chips.
- Pour into muffin cups and bake for 16-18 minutes.
- Enjoy!
