How to Make Easy and Delicious Gingerbread House Cupcakes
If your family is anything like mine, they LOVE all the fun toppings of a gingerbread house but hate that the stress that comes with the actual assembly. Problem solved! These easy and delicious gingerbread house cupcakes have all the favorite essentials of gingerbread houses (sprinkles, candy toppings, icing, and even gingerbread cake base!) and NONE of the structural stress. Today, my fellow blogger friends and I are sharing our favorite Festive Sweet Treats. We love making Gingerbread Houses but always get frustrated with the tricky walls and structure falling down. Last year, after an especially frustrating episode of multiple walls crashing at once, I thought to myself—
Why are we going to all this trouble? All my girls do is lick off the icing and eat the toppings. I’d be better off making them cupcakes next year.
AND SO I DID!
How to make Gingerbread House Cupcakes Super Moist
To start, I used the Gingerbread Cake mix from Trader Joe’s (but you could use any brand). It’s all natural, super easy, and even comes with crystalized ginger bits. Then, I replaced the 1 egg that the recipe calls for with flaxseed meal. I used 1 tablespoon flaxseed meal to 3 tablespoons water. I mixed them together in a small bowl and let them combine for 5 minutes, then I added them to the mixing bowl. I do this for ALL of my muffin/cupcake recipes. It always makes my baked goods super moist.

How to make Gingerbread House Cupcakes
Ingredients
- 1 box gingerbread cake mix and whatever else you need for that mix (ex: oil, water).
- 1 tablespoon Flaxseed meal (to use as an egg replacement) and 3 tablespoons water
- Your favorite gingerbread house toppings (ex: gum drops, sprinkles, etc)
- Paper cupcake liners
- White icing (to replicate snow)
- (Optional) Gingerbread men (We used the Pepperidge Farm Gingerbread Family pieces).
Topping Tip
Target’s Wondershop Collection has really cute gingerbread house decorations. This little candy gingerbread man came from Wondershop.
Directions:
- Make the cupcakes according the recipe on the box.
- Let the cupcakes cool for 30 minutes.
- Spread the cupcake icing over the cupcakes.
- Now for the fun part-Decorate your Cupcakes!
- Enjoy!
