These soft and chewy white chocolate chip cookies are a festive take on a classic recipe. They’ve got a wonderful raspberry flavor that’s not overwhelming (Bet ya can’t guess the secret, all-natural ingredient?). Easy to make and fun for family holiday baking session, your family will love these Festive Raspberry White Chocolate Pecan Cookies. How to make Festive White Chocolate Raspberry Pecan Cookies
What’s your secret ingredient to the rich raspberry flavor?
Some of you may have heard this story before…..
Many years ago, my sister was at her local Trader Joe’s and she saw a this local celebrity chef who had won Cupcake Wars. She was filling an entire shopping cart with the freeze-dried fruit packs, and my sister realized that was her secret ingredient for all her fruity cupcakes!
Well, upon hearing that story, I had to try this secret out!
And sure enough—those freeze-dried berries are an amazing addition to cupcakes and cookies!
I first tried this idea out on my Strawberry Chocolate Chip cookies a couple years ago.
The result was one of my MOST POPULAR COOKIE recipes…..EVER!
I started making them anytime I needed cookies—school parties, holiday parties, PTA meetings…you name it, I made it!
And my friends and neighbors couldn’t have been happier.
Benefits to using Freeze-dried fruit
My favorite part about using the freeze-dried fruit is that it doesn’t matter what time of year you make these cookies.
You’re not reliant on the fresh fruit being in season.
Secondly, the freeze-dried fruit is very forgiving and easy to use for novice bakers like myself. You don’t have to worry about their moisture making the batter too watery or adding additional bake times.
They’re freeze-dried so they absorb moisture and just add flavor.
(Conversely, they don’t dry out the batter).
My one big tip:
Sometimes the packages contain a desiccant packet for freshness. Be sure to check for this before you pour the fruit into the mixer. You don’t that pack exploding in your dough!
You’re looking for something like this:
Ingredients
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 1 teaspoon Adam’s Extract Vanilla extract
- 2 large eggs
- 1/2 cup-1 cup (depending on your taste) chopped pecans
- 1 cup white chocolate morsels
- 1 bag freeze dried raspberries—I buy mine at Trader Joe’s
- Red and Green Adam’s Extract food coloring
- Red and Green Sprinkles (Optional)

Directions
1. PREHEAT oven to 375° F. Open the bag of Freeze-Dried raspberries and take out the desiccant pack.
2. Step 2-Make the Base Dough
3. COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in white chocolate morsels, the freeze-dried raspberries, and the pecans. Divide the dough into 2 sections.
4. In the mixing bowl, take 1 section and add in about 4-6 drops of red food coloring. Mix until well combined. Set aside
5. Now, take the 2nd section of dough, return it to the mixing bowl and add in 4-6 drops of green food coloring.
6. Now, create the cookie shapes. To make two-toned regular shaped cookies, take 1 part green section and 1 part red section and form a small ball. Drop on the cookie sheet.
7. If you’d like to make a green Christmas Wreath shape, roll out a small piece of green dough with your hands like a snake then form a circle.
8. Bake the cookies for 9-11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
