This year, my older daughter has gotten on a big Chia Seed Pudding kick.
It’s a great quick and super nutritious breakfast that she can gobble down before school.

I think what she likes best is coming up with all the different flavor combinations and then watching the chia transform from hard, little seed to big gooey-blobs of nutrition in just a matter of hours.
Then she takes her new flavor experiment and likes to pretend she’s eating a fancy tea party concoction every time.
As a mom, I like the fact that it’s a Power-Food, rich in protein and Omega 3’s, high in fiber, and a good source of healthy carbs to get her through the morning.
So, when I was planning my #Choctoberfest menu, creating a fun, chocolatey chia seed pudding was a no brainer. I let my daughter pick the ingredients and without hesitation, she chose Chocolate Strawberry.

How to Make Chocolate Strawberry Chia Seed Pudding
Chia Seed Pudding is one of my favorite things to make because (besides it being so healthy), it’s ridiculously simple to make but when done well, packs a big flavorful punch!
So, your kids think you are a kitchen goddess, and you’ll be happy knowing they’re eating healthy! #momwin!
Normally for chia seed pudding, you simply add all the ingredients together, mix thoroughly, then store in the fridge for at least 2-3 hours….and you’re done.
However, with cocoa chia seed pudding, I’ve found that it’s better to blend all of the ingredients together before adding the chia seeds otherwise the cocoa won’t incorporate as easily.
So I apologize, Busy Moms, for adding an extra step, but it’s important and it’s really fast.
