Girl Scout Cookie season has just ended. The taste of the beloved thin mints still lingers on your lips. You’ve had a crazy, busy day and you just want to sit down, relax and enjoy a few more before their gone.
You head to your pantry and reach for the Thin Mints box.
But all your hand pulls out is crumbs! WHHHHAAATTTT????!!!! Noooooooooo!
Someone! Ate the Last of the Thin Mints!!!
(…and didn’t even throw away the box! Who does that? We won’t name names…but we all know it wasn’t the fish!).
You BREATHE IN.
It’s not the end of the world. There’s still one box of cookies left.
Your heart rate starts to return to normal until you realize the ONLY box left is those Gosh darn Trefoils! Those boring, no chocolate, super plain, boring, boring cookies that your kids insisted on buying because “Mommy-they have a cute Girl Scout design!”
And then you spot it.
Ahhhhhhhhhhhhh like angel wings, flying above the cabinet.
MINT CHOCOLATE BAKING pieces that you bought for some creative Pinterest-inspired baked good and forgot to make.

Handful of mint chocolate baking pieces (I used a bag of crushed Andes Candies for baking)
Some cream or milk
Fill a small glass bowl with the baking chocolate.
Add in some milk or creamer for moisture (around 1/8 cup).
Microwave for 1 minute.
Then dip the Trefoils in the chocolate.
And if you’re really feeling festive—Cover with Sprinkles!
Voila! Mint chocolatey goodness on top of the plain shortbread.
Cookies are saved!
