As you know, I LOVE making festive foods and if I can combine something for 2 different occasions (like St. Patrick’s Day and Girl Scout Cookie Season), I’m even happier.
Right now, huge swaths of the country are smack dab in the middle of Girl Scout Cookie Season, including Colorado.
Girl Scout Cookies are every where , and St. Patrick’s Day is right around the corner. So, I decided to combine the two for a delicious, festive, and healthier sweet treat.

So they’re dairy and egg-free which is great news if you have an egg or dairy allergy.

Why they’re a healthier win
Packed with antioxidant-rich dates and pecans, these energy balls are great for increasing brain function and alertness.
So grab a few for an afternoon snack when you feel like you’re fading….or have some for dessert!
Finally, they can be rolled in powdered sugar OR A Matcha powder/powdered sugar blend. Matcha powder is made from green tea and is a known for boosting metabolism and burning calories!
Sooo—-if you cover these sweet treats with it—it basically helps you burn off all the calories… making these energy bites CALORIE FREE!
Ok—well maybe NOT calorie—FREE…but that sounds good, doesn’t it?
NOTE ABOUT MATCHA POWDER TASTE: It has a distinct earthy flavor. I mixed it with powdered sugar but it still has a distinct taste. If you’re making these for kids, you may want to skip the green Matcha powder on their servings.

How to make Healthier Vegan Thin Mint Cookie Energy Balls

Ingredients
- 1 lb pitted dates —Pro-Tip—Try Costco for your dates–You can usually find a giant 2 lb tub of dates for a fraction of the price that you’d pay at the regular grocery store or even Trader Joes.
- 1 ½ cups of Thin Mints (It’s about 1 and a half sleeves of Thin Mints).
- ¼ cup chopped pecans
- About a ¼ cup of chocolate almond milk (you may need a little more)
- ½ cup of powdered sugar –this is for rolling so you may want more or less.
- About 2 teaspoons of matcha powder—this is for rolling, so you may want more or less. (I used the Matcha Powder from Trader Joes and it comes in little packets. I measured it out and it’s about 2 teaspoons).
- Optional: Green and gold sprinkles for St. Patrick’s Day
Steps:
Chop dates.
Crush the cookies.
(We put our cookies in a bag and crushed them with a rolling pin)
Combine the dates, cookies, pecans, and the chocolate almond milk in a food processor or blender.
If you use a blender, take half of the ingredients to start with so you don’t overload the blender. Just mix it in 2 batches.
When you’re done combining all ingredients, form them into small balls.
Tips for the two kinds of powder
The final step is rolling the energy balls in powder.
As you can see in the pictures, I rolled some in plain powdered sugar and some in matcha/powdered sugar blend.
To make the Matcha/Powder sugar blend, mix your Matcha powder with a ¼ cup of powdered sugar.
If you’d like to add sprinkles, the easiest way is to sprinkle them on top of the powder then roll the energy balls in the sprinkled powder.
Store in a tightly covered container in a cool place.
