Quick and EasyRoasted Potatoes and Great Northern Beans

Do you ever have one of those moments when the throw together dinner that you planned (ok, that’s a pretty strong word….let’s try that again….When the dinner that you literally threw in the oven by the seat of your pants grabbing whatever you could find in the pantry….actually turned out pretty amazing?
For some of the more domesticated goddesses, those moments might be pretty common—but for me…ummm they’re not. So when it actually happened yesterday, I was pretty darn excited and decided to document the moment.
Quick and Easy Roasted Potatoes and Great Northern Beans
Pro Tip—Are you Short on Time?
To save time, microwave the potatoes in the oven for 5-10 minutes-just so they’re 50-75% baked, then stick them in the oven so they still get that nice roasted flavor.
Why Canned Salmon?
This meal started off as just a side dish but then I realized it was turning into our ONLY dish, so I grabbed some canned salmon because it was super quick and super easy. (I also knew my girls would complain if there wasn’t an animal protein involved.) I feel like the canned salmon sounds kind of strange, but it ended up tasting really good. The potatoes, white beans, and goat cheese mixed really well with the salmon. I was quite impressed.
Ingredients:
- Red skin potatoes
- Sweet potatoes
- 2 cans Great Northern Beans
- 2 cubes crushed garlic (I used the Frozen Trader Joe’s cubes of crushed garlic)
- ¼ cup olive oil
- 2 cans of canned salmon
- dried rosemary and oregano
- goat cheese for sprinkling on top
Recipe:
- Preheat oven to 375 degrees.
- Clean the potatoes and add them to your roasting pan (once oven reaches temperature)
- Soften the frozen garlic and mix with ¼ cup olive oil drizzle over the potatoes
- Sprinkle with your favorite spices like Oregano and Rosemary
- Cook for 20 minutes. At this point, I took out the potatoes and cut them so they’d cook faster (or at least that was my thought process).
- Now add the 2 cans of drained Great Northern Beans.
- Cook for 20 minutes more. Stir every so often to keep the beans from overcooking.
- Keep an eye on the beans, you don’t want them to overcook.
- You know it’s done when the potatoes are soft and tender.
- Upon taking it out of the oven, add the canned salmon and sprinkle with goat cheese to taste.

I also added left over broccoli from the night before. However, roasted broccoli would be a great additional vegetable to throw in the pan.
