How to make Savory White Chocolate Rosemary Sauce for fish -#Choctoberfest
This White Chocolate Rosemary Lemon sauce for fish is light, fragrant, and well balanced. It’s a great compliment to Salmon with Pine Nuts (recipe also included in this post). The white chocolate lends a warm flavor that is well complimented by the fragrant herbs like the rosemary, lavender, and oregano. This White Chocolate Rosemary Sauce for fish is also great on salads (as a dressing) with goat cheese.

One of my favorite things for dinner is fish and roasted veggies and I love coming up with new ways to make a “good thing” even better. So when the good folks at Forte Chocolate asked if I could come up with a “savory” recipe for one of their chocolates, I thought—“Why Not!”

This was actually a much harder assignment than I anticipated because the Forte chocolates are sooo good, I just wanted to gobble them up plain….but I stood strong and incorporated them into some exciting dishes.
It was also a lot of fun because I had never made a savory dish with chocolate before. However, the Forte chocolates are so versatile, it made it quite easy.
How to Make Pine Nut Salmon with Savory White Chocolate Rosemary Sauce
This White Chocolate Lemon sauce is light, fragrant, and well balanced. It’s not too rich or buttery. You can taste the chocolate, as well as the fragrant herbs like the rosemary, lavender, and oregano. It’s the perfect compliment to fish and would also taste great on salads (as a dressing) with goat cheese.

Ingredients:
Note: This recipe uses Herbes de Provence which is a blend of spices including: thyme, marjoram, savory, rosemary, basil, sage, and lavender. If you can’t find this combination at your local store, try using just basil, rosemary, sage, and thyme. But if you can find Herbes de Provence with lavender, it’s something special.
For the Fish
- Olive oil
- Herbes De Provence—you can find it at most grocery stores or Trader Joe’s
- Pine nuts 4-1/2 cup depending how much fish you have
For the sauce:
- ¼ cup dry white wine
- ¼ cup salted butter
- Juice of 1 lemon
- 2 cloves of roasted garlic (or in a pinch-2 frozen minced garlic cubes)
- 1 tablespoon apple cider vinegar
- Sprinkle of Herbes de Provence
- 1 tablespoon olive oil
Steps:
Preheat oven to 400.
Steps to Roast Garlic (This takes about 40 minutes so start it ahead of time.)
Cut off the top (about ¼) , pour olive oil all over, wrap in aluminum foil and cook at 400 degrees for 30-40 minutes.

You’ll only need 2 cloves for this recipe, so save the other cloves to spread over some bread or mix with your vegetables or side dishes.
Steps to prepare the fish:
- Preheat oven to 400
- Rinse the fish, then sprinkle olive oil and your herbs, then top with the pine nuts and cook for about 15-20- (or until salmon starts to flake).
While the fish is cooking, prepare your sauce on the stove top.
Steps to make the White Chocolate Rosemary Sauce:
- Melt the butter in the sauce pan.
- Once the butter is almost melted add the Forte White Chocolate.
- Next, add the dry white wine and add the rest of the ingredients: Juice of 1 lemon, 2 cloves of roasted garlic (or in a pinch-2 frozen minced garlic cubes). 1 tablespoon apple cider vinegar, Sprinkle of Herbs de Provence, 1 tablespoon olive oil.
- Stir until the chocolate and butter are melted and the ingredients are well combined.
Here’s what my chocolate looked like when melting AND here’s a picture of the salmon upon completion.
When the salmon is done, take it out of the oven and pour the white chocolate sauce on top to taste.
