Super Easy and Delicious Mini Cherry Pies
These delicious Mini Cherry Pies are super easy to make and perfect for summer gatherings.
My favorite part—they’re individual sized so it’s great for portion control. But I dare you to eat just one!

How to Make Super Easy and Delicious Mini Cherry Pies
I just love the idea of fresh and fruity pies in Summertime.
But I realized recently that I haven’t really ever made any yummy fruit pies. I usually just buy them at the store. (sorry, don’t judge, lol).
So I decided to fix that this year during #SummerDessertWeek.

Time-Saver Tips
I used pre-made dough so I could have more time to focus on the filling.
I like to use this one from Trader Joe’s. It makes a light, flakey, and buttery crust that’s soo good. Just set it on the counter 20 minutes ahead of time to defrost.
Use pre-pitted cherries
I used a bag of frozen Dark Pitted cherries (also from Trader Joe’s). The frozen cherries are picked at the peak of sweetness and super plump and juicy. So it’s perfect for a pie.
Ingredients:
- Pre-made Pie Dough (I used one from Trader Joe’s)
- 1 lb bag of frozen pitted cherries (I got mine from Trader Joe’s)
- 1 tablespoon fresh lemon juice
- 2 tablespoons water
- 1/3 cup sugar
- 1 tablespoon cornstarch
- ½ teaspoon almond extract
Steps:
Preheat oven per directions on the pie dough. (My dough, from Trader Joe’s said 450 degrees).
If you’re using frozen pie dough, like I did, let it defrost on the counter for 20 minutes (or until pliable).
This recipe makes about 10-12 mini pies, depending on how full you make each muffin cup.
- Grease a muffin tin.
- Cut small sections of the rolled-out pie dough. Make them large enough to line the muffin cups with a little bit extending over the edges so you can cover the mini pies.
- Line the muffin cups with the dough and set aside.
- Next, combine all ingredients in a sauce pan. Bring to a boil for 10 minutes. Stir continuously.
- When the filling is ready, spoon it into each muffin cup.
- Now take the extra dough that extends over the edges of the cup) and make a few slits on each side. You’ll then fold the pieces over the muffin cup to cover the filling. By making the slits, it will be easier to make a pseudo lattice.
- Now bake for 24-26 minutes.
- Cool for 10 minutes then enjoy!

These cute little muffins are great for picnics or even just backyard BBQ’s.
I know your family will love them as much as mine did. In fact, my kids gobbled them up so fast, I didn’t even have time to grab a picture of them enjoying my special dessert! #momlife
